These are round discs that are clamped on machines. Normally, a hollow bevel is ground with the round outer side of the disc. The behavior differs greatly depending on the material used and the machine used.
Sometimes you can also grind a straight bevel (or the back side) of the iron on the flat side of the stone, because, of course, there are machines that work with the flat surface of a grinding wheel.
