The idea here is to first grind a slightly incorrect bevel by machine, which can then easily be sharpened further by hand (see manual resharpening after machine sharpening).

Due to the hollow bevel, you then have to remove only a little metal for a long time. And only when slowly too much grinding is needed, then again a hollow bevel is ground with an angle that is too small. You can also consider the work on the hollow bevel as a kind of micro bevel.
